Bean And Barley Soup With Kale

Total Time: 4 hrs 10 mins Preparation Time: 10 mins Cook Time: 4 hrs

Ingredients

  • Servings: 8
  • 7 cups beef stock
  • 2 (15 ounce) cans great northern beans, drained and rinsed
  • 1 1/2 cups chopped onions
  • 1 cup chopped carrot
  • 8 ounces mushrooms, sliced
  • 1 teaspoon minced garlic
  • 1/8 teaspoon crushed red pepper flakes
  • 2 teaspoons dried thyme
  • 1/2 cup quick-cooking barley
  • 3 -4 cups sliced kale
  • 1 tablespoon lemon juice
  • salt and pepper

Recipe

  • 1 combine all ingredients except barley, kale, lemon juice, salt and pepper in a slow cooker.
  • 2 cover and cook on high 4-5 hours, adding barley and kale during the last 30 minutes.
  • 3 stir in lemon juice.
  • 4 season to taste with salt and pepper.
