Bean And Barley Soup With Kale

Ingredients

- 7 cups beef stock
- 2 (15 ounce) cans great northern beans, drained and rinsed
- 1 1/2 cups chopped onions
- 1 cup chopped carrot
- 8 ounces mushrooms, sliced
- 1 teaspoon minced garlic
- 1/8 teaspoon crushed red pepper flakes
- 2 teaspoons dried thyme
- 1/2 cup quick-cooking barley
- 3 -4 cups sliced kale
- 1 tablespoon lemon juice
- salt and pepper
Recipe
- 1 combine all ingredients except barley, kale, lemon juice, salt and pepper in a slow cooker.
- 2 cover and cook on high 4-5 hours, adding barley and kale during the last 30 minutes.
- 3 stir in lemon juice.
- 4 season to taste with salt and pepper.
