Beef & Roasted Pepper Crostini

Ingredients
- 3 tablespoons olive oil
- 2 garlic cloves, pressed
- 16 ounces french bread
- 3/4 lb roast beef, thinly sliced
- 1 (12 ounce) jar roasted red peppers
- 2 cups grated cheese
Recipe
- 1 in a glass measuring cup combine oil and the pressed garlic and microwave on high for thirty seconds.
- 2 slice bread into 1/2" thick slices.
- 3 lightly brush top side of each slice of bread with the oil mixture and arrange on two baking sheets.
- 4 bake in a preheated oven 450 degrees for 6-8 minutes or until lightly golden brown.
- 5 rinse roasted peppers and drain well and chop.
- 6 remove from oven and layer equal amounts of beef, pepper and cheese over each toasted slice.
- 7 bake for 2-4 minutes more or until cheese is melted.
- 8 serve.
