Beef Barley Stew

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 1 lb boneless beef cube
  • 3 cups potatoes, cubed
  • 2 cups carrots, chopped
  • 1/2 cup barley
  • 1 (8 ounce) can diced tomatoes
  • 1/4 cup green pepper, diced
  • 1/2 cup onion, chopped
  • 1/2 cup celery (optional)
  • 2 bay leaves
  • salt & pepper
  • 1/4 cup beef base (powder)
  • 6 cups water

Recipe

  • 1 brown beef with onions in large pot.
  • 2 add water once browned and bring to a boil.
  • 3 add barley and remaining vegetables.
  • 4 bring to a boil on medium heat.
  • 5 add beef soup base and bay leaves.
  • 6 simmer until vegetables are at desired texture. add salt and pepper to taste.
