Arizona Southwest Rice Pilaf

Ingredients
- Servings: 4
- 3 tablespoons olive oil
- 1 onion, chopped
- 1 red pepper, chopped
- 1 carrot, chopped
- 1 stalk celery, chopped
- 1 cup long-grain rice, uncooked
- 1 (14 1/2 ounce) can beef broth
- 1 tomato, diced
- 1 large jalapeno chile, minced (or 1-4 oz. can)
Recipe
- 1 heat olive oil in a heavy large skillet over medium-high heat.
- 2 add onion, red pepper, carrot and celery.
- 3 saute until vegetables begin to soften, about 7 minutes.
- 4 add rice and stir to coat well.
- 5 add broth and bring to a boil.
- 6 cover skillet, reduce heat to low and simmer until rice is tender and broth is absorbed, about 20 minutes.
- 7 mix in tomato and jalapeno; heat through.
- 8 serve.
