Beefy Bean Soup

Ingredients
- Servings: 8
- 2 quarts water
- 1 lb meaty beef shanks
- 2 (15 ounce) cans kidney beans, drained and rinsed
- 1 (14 ounce) can tomatoes
- 1 cup sliced carrot
- 1 cup onion
- 1 cup diced turnip
- 1 cup cut green beans
- 1 celery rib
- 1 half onion
- 1 teaspoon dried oregano
- 1 teaspoon thyme
- 1 bay leaf
- salt and pepper
Recipe
- 1 combine all ingredients, except salt and pepper in slow cooker; cover and cook on low for 6-8 hours.
- 2 remove beef shanks; cut meat from bones and return to soup. discard bones and bay leaf; season to taste with salt and pepper.
