Beef Mushroom Barley Soup

Ingredients

  • Servings: 4
  • 1/2 lb ground beef
  • 2 cups sliced fresh mushrooms
  • 4 garlic cloves, minced
  • 2 tablespoons butter
  • 4 (14 1/2 ounce) cans beef broth
  • 2/3 cup medium pearl barley
  • 2 tablespoons soy sauce
  • 2 medium carrots, sliced
  • 1 teaspoon dill weed
  • salt and pepper

Recipe

  • 1 in medium saucepan, brown ground beef. remove to a plate. in same pan, saute mushrooms and garlic in butter for 5 minutes (med-low heat). stir in the browned ground beef, broth, barley and soy sauce. bring to a boil. reduce heat; cover and simmer for 20 minutes.
  • 2 add the carrot, dill, salt and pepper (if desired). cover and simmer for 15 more minutes, or until barley and carrot are tender.
