Beef Mushroom Barley Soup

Ingredients

- 1/2 lb ground beef
- 2 cups sliced fresh mushrooms
- 4 garlic cloves, minced
- 2 tablespoons butter
- 4 (14 1/2 ounce) cans beef broth
- 2/3 cup medium pearl barley
- 2 tablespoons soy sauce
- 2 medium carrots, sliced
- 1 teaspoon dill weed
- salt and pepper
Recipe
- 1 in medium saucepan, brown ground beef. remove to a plate. in same pan, saute mushrooms and garlic in butter for 5 minutes (med-low heat). stir in the browned ground beef, broth, barley and soy sauce. bring to a boil. reduce heat; cover and simmer for 20 minutes.
- 2 add the carrot, dill, salt and pepper (if desired). cover and simmer for 15 more minutes, or until barley and carrot are tender.
