Bacon Rice Cayman Islands Style

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 6 -10 slices bacon
  • 1 small onion
  • 1/4 cup pineapple tidbits
  • 1/4 cup water chestnut
  • 1 tablespoon butter
  • 1 teaspoon sugar
  • 1 cup rice, par boiled
  • 1 1/2 cups water
  • fresh ground pepper
  • salt

Recipe

  • 1 chop bacon to bacon bits.
  • 2 chop water chestnuts to little cubes.
  • 3 cook the diced bacon with onions until tender.
  • 4 separate the bacon and the bacon grease.
  • 5 combine the bacon grease, butter and water in separate pot.
  • 6 cook rice for 15 minutes as normal.
  • 7 this allows the bacon flavour into the rice.
  • 8 combine cooked rice and remaining ingredients (chopped water chestnuts, chopped bacon, onions and pineapple).
  • 9 salt and pepper to taste.
  • 10 serve with ham or beef.
