Barley Casserole

Ingredients
- Servings: 6
- 1/4 cup butter
- 1/2 cup chopped onion
- 1/2 cup sliced mushrooms
- 1 cup pearl barley or 1 cup pot barley
- 1/3 cup sliced almonds
- 1/4 cup sliced green onion
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 3 beef bouillon cubes
- 3 cups boiling water
Recipe
- 1 melt butter in fry pan.
- 2 add onions, mushrooms and barley.
- 3 saute until lightly browned.
- 4 put into greased 1 1/2 quart casserole.
- 5 add almonds, green onion, salt and pepper.
- 6 dissolve oxo cubes in boiling water.
- 7 add to casserole.
- 8 stir to mix well.
- 9 cover and bake in 350 degree oven for 1 1/2 hours or until barley is tender.
