Aloha Meatballs

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 1 lb ground turkey or 1 lb 96% lean ground beef
  • 1 cup cooked brown rice
  • 1 (8 ounce) can crushed pineapple with juice, drained
  • 1/2 cup scallion
  • 1 tablespoon reduced sodium soy sauce
  • 1 teaspoon ginger
  • 3/4 cup unsalted chicken stock
  • 1/3 cup chili sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons brown sugar
  • 2 teaspoons cornstarch
  • 1/2 teaspoon ground ginger

Recipe

  • 1 combine the meatball ingredients in a medium bowl, and mix thoroughly.
  • 2 coat a baking sheet with nonstick cooking spray.
  • 3 shape meatballs, and place on the baking sheet.
  • 4 bake at 350 degrees for about 25 minutes, or until thoroughly cooked.
  • 5 transfer the meatballs to serving dish and keep warm.
  • 6 combine the sauce ingredientts in a small saucepan, and stir until the cornstarch is dissolved.
  • 7 place over medium heat, and cook and stir until the mixture comes to a boil.
  • 8 reduce the heat to low, and cook and stir for another minute, or until the mixture thickens slightly.
  • 9 pour the sauce over the meatballs, toss to mix and serve.
