Beef And Barley Soup With Wils Mushrooms

Ingredients

  • Servings: 12
  • 2 lbs stewing beef
  • 3 quarts cold water
  • 1 ounce dried mushroom
  • 1/2 cup pearl barley
  • 2 onions, chopped
  • 2 celery ribs, sliced
  • 2 carrots, chopped
  • 1 teaspoon salt
  • 1/2 pepper
  • 1/2 teaspoon thyme
  • 1 bay leaf
  • 1 garlic clove, minced
  • 2 tablespoons parsley
  • 1 lb mushroom, sliced
  • 28 ounces tomatoes
  • 1 (10 ounce) can beef broth

Recipe

  • 1 combine beef and water.
  • 2 simmer for 1 hour skimming scum.
  • 3 soak dried mushrooms in 1 cup warm water for 20 minutes.
  • 4 strain liquid to remove grit.
  • 5 chop mushrooms.
  • 6 add dried mushrooms, liquid, barley, onions, celery , carrots and seasonings.
  • 7 simmer another hour.
  • 8 add pureed tomatos and fresh mushrooms.
  • 9 simmer 30 minutes.
  • 10 adjust liquid and seasonings if necessary.
