Beef And Apple Meatballs

Ingredients

- 1 lb cooking apple, peeled, cored and quartered
- 1 lb lean ground beef
- 3 ounces fresh breadcrumbs
- 2 teaspoons dried sage
- 1 egg yolk, beaten
- 2 tablespoons olive oil
- 1 1/2 lbs pasta sauce
Recipe
- 1 coarsely grate the apples and place half in a large bowl.
- 2 add the ground beef, breadcrumbs, sage, egg and plenty of seasoning. use clean hands to mix the mixture together.
- 3 divide into about 32 pieces and roll into small balls.
- 4 heat the oil in a large non-stick frying pan, add the meatballs and fry over a high heat for six to eight minutes, stirring occasionally until golden brown on all sides.
- 5 add the remaining grated apples to the pan and stir well. add the tomato sauce and season to taste.
- 6 cover and simmer for five to seven minutes or until the sauce is thickened. serve with freshly cooked pasta.
