Black Bean Soup

Ingredients

- 1 lb dried black beans
- 2 tablespoons olive oil
- 1 3/4 cups onions, chopped
- 1 cup celery, chopped
- 3/4 cup carrot, chopped
- 1/2 cup tomato paste
- 2 tablespoons ground cumin
- 2 tablespoons ground coriander
- 1 1/2 cups dry red wine
- 4 (14 1/2 ounce) cans beef broth
Recipe
- 1 place beans in a large pot, add enough cold water to cover beans by 3 inches.
- 2 bring to a boil.
- 3 remove from heat, and cover and let stand 2 hours.
- 4 drain.
- 5 heat oil in heavy large pot over med-high heat.
- 6 add onions, carrots, and celery, and sauté until tender (about 8 minutes)
- 7 add tomato paste, cumin and coriander.
- 8 reduce to medium and cook 10 minutes add wine and simmer 5 minutes
- 9 add drained beans and broth.
- 10 cover and simmer until beans are tender (about 2 hours) รข€“ season soup with salt and pepper.
