Black Bean Soup

Ingredients

  • Servings: 6
  • 1 lb dried black beans
  • 2 tablespoons olive oil
  • 1 3/4 cups onions, chopped
  • 1 cup celery, chopped
  • 3/4 cup carrot, chopped
  • 1/2 cup tomato paste
  • 2 tablespoons ground cumin
  • 2 tablespoons ground coriander
  • 1 1/2 cups dry red wine
  • 4 (14 1/2 ounce) cans beef broth

Recipe

  • 1 place beans in a large pot, add enough cold water to cover beans by 3 inches.
  • 2 bring to a boil.
