Beef Supper In A Flash

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 8 ounces lean sirloin steaks, cut into 10cm/4inch strips
  • 1 tablespoon sunflower oil
  • 1 ounce flour, mixed with
  • 1 teaspoon paprika
  • salt & freshly ground black pepper
  • 1 red onion, peeled and sliced
  • 2 garlic cloves, peeled and finely chopped
  • 6 ounces new potatoes, cooked and halved
  • 1 dash worcestershire sauce
  • 1 1/4 cups beef stock, hot
  • 4 ounces cherry tomatoes, halved
  • 1 tablespoon chopped fresh parsley or 1 tablespoon chives

Recipe

  • 1 heat the oil in a large frying pan.
  • 2 meanwhile, place the flour in a large bowl or plastic bag and mix together with the paprika and seasoning.
  • 3 toss the beef strips in the flour.
  • 4 cook the beef for 3-4 minutes, stirring occasionally.
  • 5 add the onion, garlic and potatoes and cook for a further 2-3 minutes.
  • 6 add the worcestershire sauce, seasoning (if required), stock and cherry tomatoes and heat for 1-2 minutes.
  • 7 sprinkle over the parsley or chives.
  • 8 serve.
