Beef Stroganoff

Ingredients

  • Servings: 6
  • 1 lb lean beef, cut into bite-sized pieces
  • 1 teaspoon butter
  • 2 cups fresh sliced mushrooms
  • 1/2 cup chopped onion
  • 1 cup nonfat beef broth
  • 2 tablespoons ketchup
  • 1 garlic clove, minced
  • 2 tablespoons cornstarch
  • 1 cup fat free sour cream

Recipe

  • 1 saute the mushrooms, onions and garlic in butter. my son won't eat onions, so i process them and the garlic in the food processer first. he can't tell the difference. add the beef and ketchup. make a slurry with the beef broth and cornstarch, then add to beef mixture. cook until thickened, then add the sour cream. serve over noodles, potatoes or rice.
