Beef Stroganoff Pie

Ingredients

- 1 lb lean ground beef
- vegetable oil cooking spray
- 4 1/2 ounces sliced mushrooms, drained
- 1 medium onion, chopped
- 1 garlic clove, chopped
- 1/2 cup bisquick baking mix
- 1 cup milk
- 1/4 cup sour cream
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 eggs
- fresh parsley, chopped
Recipe
- 1 heat oven to 400°f.
- 2 spray pie plate with cooking spray.
- 3 in a 10-inch skillet, cook beef mushrooms, onion and garlic over medium heat for 8 to 10 minutes, stirring occasionally, until beef is browned; drain.
- 4 spread in pie plate.
- 5 stir remaining ingredients except parsley in a medium bowl with wire whisk until blended.
- 6 pour into pie plate.
- 7 sprinkle on parsley.
- 8 bake 30 to 35 minutes until knife inserted in center comes out clean.
- 9 let stand 5 minutes before serving.
