Beef & Roasted Pepper Crostini

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 3 tablespoons olive oil
  • 2 garlic cloves, pressed
  • 16 ounces french bread
  • 3/4 lb roast beef, thinly sliced
  • 1 (12 ounce) jar roasted red peppers
  • 2 cups grated cheese

Recipe

  • 1 in a glass measuring cup combine oil and the pressed garlic and microwave on high for thirty seconds.
  • 2 slice bread into 1/2" thick slices.
  • 3 lightly brush top side of each slice of bread with the oil mixture and arrange on two baking sheets.
  • 4 bake in a preheated oven 450 degrees for 6-8 minutes or until lightly golden brown.
  • 5 rinse roasted peppers and drain well and chop.
  • 6 remove from oven and layer equal amounts of beef, pepper and cheese over each toasted slice.
  • 7 bake for 2-4 minutes more or until cheese is melted.
  • 8 serve.
