Beef & Rice Soup (sierra Leone)

Ingredients
- Servings: 4
- 1 lb beef, cubed
- 2 (14 ounce) cans low sodium beef broth
- 1 -2 cup water
- 4 medium chilies, finely chopped
- 1 medium onion, finely chopped
- 2 medium tomatoes, diced
- 0.5 (6 ounce) can tomato paste
- 1/2 teaspoon thyme
- salt and pepper, to taste
- 2 cups cooked rice
Recipe
- 1 bring beef stock & water to a boil then add the beef. lower heat & simmer 20 minutes.
- 2 add remaning ingredients except rice. cover and continue to simmer 25 more minutes.
- 3 stir in the rice before serving. (you may need to add more water).
