Beef Enchiladas

Ingredients

  • 1 lb lean ground beef
  • 1 (16 ounce) can refried beans
  • 2 (4 ounce) cans green chilies, drained
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 teaspoon oregano leaves
  • 2 1/2 cups sharp cheddar cheese, grated
  • 3 teaspoons green onions, chopped
  • 1 (19 ounce) can enchilada sauce
  • 8 flour tortillas, 8 inch
  • sour cream

Recipe

  • 1 cook ground beef, salt, pepper, green chilies, onion, and garlic over medium heat until beef is browned and onion is tender. drain well. fold in refried beans.
  • 2 preheat oven to 350 degrees.
  • 3 pour 1/2 of enchilada sauce into a lightly greased 9x13 baking dish; sprinkle with oregano. spoon 3-4 t of beef and bean mixture onto each tortilla, top with 2 t cheese. roll up and place seam side down in sauce.
  • 4 top tortillas with remaining enchilada sauce and cheese. bake for 30 minutes. garnish with green onions and sourc cream.
  • 5 serves 4-6.
