Beef Cassoulet (casserole)

Ingredients

  • Servings: 6
  • 1 1/2-2 lbs beef chuck, cut in 1-inch cubes
  • 6 italian sausages (about 1 lb)
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 2 medium green peppers, seeded, cut into chunks
  • 4 medium potatoes, pelled, cut into quarters
  • 2 (1 lb) cans red kidney beans, drained
  • 1 teaspoon basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup beef broth

Recipe

  • 1 in heavy skillet brown sausages well; cut into brite-size pieces and set aside.
  • 2 brown beef in same silled in about 2 tbsp of sausage fat. add onion and garlic. season with basil, salt and pepper.
  • 3 cover and simmer 1 hour or until meat is almost tender.
  • 4 in 3-quart covered casserole, combine all ingredients. cover and bake at 350 f for 1 hour and 15 minutes, or until potatoes are tender.
