Beef And Sun-dried Tomato Roll-ups

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 48
  • 1/2 lb thinly sliced cooked roast beef (from deli)
  • 1/2 cup light cream cheese, with roasted garlic,softened
  • 1/4 cup finely chopped sun-dried tomato packed in oil

Recipe

  • 1 spread each slice of roast beef with cream cheese.
  • 2 sprinkle with chopped sundried tomatoes.
  • 3 roll up each slice tightly.
  • 4 refrigerate, covered, for at least an hour or until firm.
  • 5 to serve, cut each roll into 4 pieces.
  • 6 secure each with a cocktail toothpick.
  • 7 note: cream cheese with chives may be substituted.
  • 8 also, these rollups are not served on their sides like pinwheels.
  • 9 the cut sides are on each end, not up and down.
  • 10 they may be secured with sprigs of fresh rosemary, instead of the toothpick.
