Beefy Pizza Subs

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 2 cups sliced mushrooms
  • 1 green bell pepper, cut into thin strips
  • 1 onion, cut into thin wedges
  • 1 large garlic clove, finely chopped
  • 1 teaspoon dried basil or 1 teaspoon dried oregano
  • 1/4 teaspoon hot pepper flakes
  • 1 1/2 cups thinly sliced cooked flank steaks (or deli roast beef, cut into strips)
  • 3/4 cup pizza sauce (or tomato pasta sauce)
  • salt
  • fresh ground black pepper
  • 4 crusty rolls
  • 6 ounces thinly sliced mild provolone cheese or 6 ounces mozzarella cheese

Recipe

  • 1 in a large skillet, heat oil over medium-high heat.
  • 2 add mushrooms, green pepper, onion, garlic, basil, and hot pepper flakes; cook, stirring, for 5 minutes or until softened.
  • 3 stir in beef and pizza sauce; cook until heated through.
  • 4 remove from heat; season with salt and pepper to taste.
  • 5 cut rolls along one side and open like a book; layer with cheese slices.
  • 6 place on baking sheet under preheated broiler for 1 minute or until cheese melts.
  • 7 watch carefully.
  • 8 spoon beef mixture into rolls and serve immediately.
