Beef Patties With Saucy Mushrooms

Ingredients

- 1 onion
- 1 egg
- 2 tablespoons dry breadcrumbs
- 3/4 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 3 garlic cloves, minced
- 1 lb lean ground beef
- 1 tablespoon vegetable oil
- 2 1/2 cups mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1 1/2 cups chicken broth
- 1/2 teaspoon worcestershire sauce
- 2 teaspoons fresh parsley, chopped
Recipe
- 1 finely chop one half of the onion.
- 2 slice the remaining half and set aside.
- 3 in a large bowl, combine the chopped onion, egg, bread crumbs, 1 tablespoon water, thyme, salt, pepper and half of the garlic, then mix in the beef.
- 4 shape into 8 1/2" thick patties.
- 5 in a large skillet, heat the oil over medium heat and fry the patties until browned on both sides, no longer pink inside and a meat thermometer inserted into the centre registers 160 degrees f, about 10 minutes.
- 6 transfer to a plate.
- 7 drain the fat from the pan.
- 8 fry the mushrooms, sliced onion and remaining garlic until the mushrooms are softened and browned, 4 minutes.
- 9 add the flour and cook, stirring, for 1 minute.
- 10 add the broth and worcestershire sauce.
- 11 bring to a boil and boil, stirring, until thickened, about 2 minutes.
- 12 return the patties to the pan and add the parsley.
- 13 heat through.
