Beef-ciabatta Stack With Beet-horseradish Spread

Ingredients

  • 1/2 cup canned beets, drained and minced
  • 2 -4 tablespoons horseradish
  • 8 slices ciabatta (crusty) or 8 slices four crusty rolls
  • 8 ounces beef (lean, sliced)
  • 1/2 cup red onion (sliced)
  • 1 (4 ounce) can sliced mushrooms, drained*
  • 2 cups lettuce (leaf type, shredded)

Recipe

  • 1 in a small bowl combine beets and horseradish to make spread; blend well. to assemble sandwich, spread beet-horseradish mixture on one side of 4 slices of bread. arrange beef, onion, mushrooms and lettuce on top. top with remaining slices of bread.
