Beef Strips With Zucchini And Tomatoes

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 2 small round steaks, approximate 1/2 to 3/4 pound, cut in strips
  • 1 (15 ounce) can zucchini, in italian style sauce (i used del monte)
  • 1 (15 ounce) can diced tomatoes, with juices
  • italian seasoning
  • 1 1/2 teaspoons minced garlic (i used jarred for convenience)
  • salt, pepper to taste
  • crushed red pepper
  • diced onion, was considering using, but did not
  • egg noodles
  • 8 ounces water, if mixture too thick
  • 1/4 cup wine, if desired it was what i had, not necessary, can also use beef broth id desired (i used a zinfandel, i did not use)

Recipe

  • 1 in electric skillet or frying pan brown beef strips (can use pam spray, i did not use).
  • 2 when browned add seasonings.
  • 3 add canned zucchini and tomatoes.
  • 4 simmer ( i left mine for 30 minutes in electric skillet) can be put on low and left to simmer, only melds flavors.
  • 5 stir occasionally.
  • 6 meanwhile cook egg noodles according to package directions.
  • 7 add small amount of water to beef mixture if needed.
  • 8 drain egg noodles.
  • 9 serve beef mixture over egg noodles with juice.
