Beef Tenderloin

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 12
  • 1 cup dry sherry
  • 1 cup light soy sauce
  • 5 green onions, finely chopped
  • 1 (5 -6 lb) beef tenderloin, trimmed
  • 2 tablespoons olive oil
  • rosemary sprig, garnish

Recipe

  • 1 in a bowl, stir the first 3 ingredients together.
  • 2 rub tenderloin with olive oil, and place on a wire rack in a roasting pan.
  • 3 pour sherry mixture into pan.
  • 4 bake in a preheated 450° oven for 45-50 mintues, basting occasionally, or until a meat thermometer inserted into the thickest portion reads 140° for medium rare (160° for medium).
  • 5 remove from oven, cover tenderloin loosely with foil; let stand 15 minutes before slicing.
  • 6 garnish, if desired; serve with pan drippings.
