Beef & Rice Soup (sierra Leone)

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 1 lb beef, cubed
  • 2 (14 ounce) cans low sodium beef broth
  • 1 -2 cup water
  • 4 medium chilies, finely chopped
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, diced
  • 0.5 (6 ounce) can tomato paste
  • 1/2 teaspoon thyme
  • salt and pepper, to taste
  • 2 cups cooked rice

Recipe

  • 1 bring beef stock & water to a boil then add the beef. lower heat & simmer 20 minutes.
  • 2 add remaning ingredients except rice. cover and continue to simmer 25 more minutes.
  • 3 stir in the rice before serving. (you may need to add more water).
