Beef Creole (boeuf Creole)

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2 cups cooked beef, coarsely chopped
  • 2 tablespoons lard or 2 tablespoons drippings
  • 1/2 green pepper, chopped
  • 1 small onion, minced
  • 3 tablespoons flour
  • 8 ounces okra, drained
  • cajun seasoning
  • 1 cup celery, diced
  • 2 cups canned tomatoes
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1 tablespoon worcestershire sauce

Recipe

  • 1 heat lard in heavy skillet.
  • 2 slowly saute meat, green pepper, onion, and celery for 10 minutes.
  • 3 sprinkle with flour and blend inches.
  • 4 add okra, seasonings, and tomatoes.
  • 5 cook slowly for 20 minutes, or until done, stirring frequently.
