Beef Barley Stew

Total Time: 1 hr 20 mins Preparation Time: 20 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 1/2 lbs lean beef, cut into 1/2 inch cubes
  • 1 medium onion, chopped
  • 1 tablespoon cooking oil
  • 6 cups beef broth
  • 1 cup barley
  • 1 teaspoon thyme
  • 1/2 teaspoon marjoram
  • 1/4 teaspoon rosemary, crushed
  • 1/4 teaspoon pepper
  • 4 carrots, sliced
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 brown meat and onion in oil.
  • 2 put into a deep pan along with the broth, barley, thyme, marjoram, rosemary, pepper and carrots.
  • 3 bring to a boil, reduce heat; cover and simmer for 1 hour or until carrots and barley are tender.
  • 4 add parsley before serving.
