Beef Barley Stew

Ingredients
- Servings: 8
- 1 1/2 lbs lean beef, cut into 1/2 inch cubes
- 1 medium onion, chopped
- 1 tablespoon cooking oil
- 6 cups beef broth
- 1 cup barley
- 1 teaspoon thyme
- 1/2 teaspoon marjoram
- 1/4 teaspoon rosemary, crushed
- 1/4 teaspoon pepper
- 4 carrots, sliced
- 2 tablespoons fresh parsley, chopped
Recipe
- 1 brown meat and onion in oil.
- 2 put into a deep pan along with the broth, barley, thyme, marjoram, rosemary, pepper and carrots.
- 3 bring to a boil, reduce heat; cover and simmer for 1 hour or until carrots and barley are tender.
- 4 add parsley before serving.
