Beef & Barley Soup

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • Servings: 4
  • 2 cups stewing beef, browned
  • 9 cups cold water
  • 1 cup tomato juice
  • 1 cup barley
  • 1/2 cup onion, finely chopped
  • 1/2 cup carrot, cut in very thin strips
  • 3 beef bouillon cubes (optional)
  • 1 teaspoon salt
  • 1/3 cup celery, finely chopped

Recipe

  • 1 combine all ingredients in a large pot and simmer, covered, for 3 hours or until barley is tender.
  • 2 taste for salt and adjust if necessary.
