Beef And Vegetables In A Pita

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb ground beef
  • 1 onion, chopped
  • 1/2 teaspoon minced garlic
  • 1/2 lb fresh mushrooms, sliced
  • 1 1/4 lbs fresh spinach, cleaned and chopped
  • 2 tablespoons drained capers
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 -6 pita breads, split open at one edge
  • 1 tomato, chopped
  • 1/2 cup plain yogurt

Recipe

  • 1 in a skillet, cook onion and beef over medium high until beef is crumbly and brown.
  • 2 drain off excess fat. stir in garlic, mushrooms and spinach and cook, stirring frequently, until spinach is tender, 3-4 minutes.
  • 3 stir in capers, salt and pepper. spoon mixture into pita breads and top with tomato and yogurt.
