Bean Soup With Sausage

Ingredients

- 1 tablespoon olive oil
- 2 italian sausages, diced
- 1 leek, sliced
- 2 garlic cloves, minced
- 2 carrots, diced
- 2 celery ribs, sliced
- 3 tablespoons all-purpose flour
- 2 beef bouillon cubes
- 1/2 cup small shell pasta
- 1 (400 g) can four-bean mix
- 1 1/2 liters water
Recipe
- 1 heat the oil in a large saucepan and add sausage. cook over medium heat for 5 minutes until golden. remove from sauce pan and set a side.
- 2 add leak, garlic, carrot and celery to the saucepan and cook for 5 minutes.
- 3 add flour and cook for 2 minutes. add stock cubes and 1 1/2 liters of water.
- 4 bring to the boil reduce heat and simmer for 20 minutes.
- 5 add pasta and beans and cook for 8 to 10 minutes until pasta is al dente.
- 6 return the sausage to the soup and season with salt and pepper to your taste.
